Chicken Soup is Like a Hug for Your Stomach


I love soup, like a lot. I could eat it everyday and don’t get me started on a good broth! And now that fall is here, the time is right for a good chicken (no noodle) soup 🥣


This soup has origins in a Caribbean/Latin-American flavor profile, with tastes like cilantro and a savory broth with garlic and onion, it is no wonder it becomes a full meal. I can and have eaten this soup at every meal and it is satisfying each time. The ingredients are fresh, wholesome, and healthy. I followed the rules of Whole30, a body reset program that eliminates any and all processed foods, grains, legumes, sugar, wheat, gluten, etc. It is food that makes you feel good and satisfied. I’ve included my recipe but of course feel free to play around with the spices, but don’t skip out on seasoning your chicken!


 

Ingredients

🔅 2 TBSP Ghee/clarified butter

🔅 1 LB boneless chicken thighs or breast, sliced

🔅 1 medium onion, chopped

🔅 4-6 cloves of garlic, minced

🔅 1 LB Yukon gold potatoes, peeled and diced

🔅 1/2 LB carrots, diced

🔅 1/2 bunch of cilantro, chopped

🔅 1 carton of Whole 30 approved chicken broth or chicken bone broth

🔅 4 TBSP Flor’s Adobo Flavor Bomb

🔅 salt and paper to taste

Directions 🧭

🔅Season the chicken to your liking, I used the juice of one lime and Flor’s Adobo Flavor Bomb

🔅In a large pot, heat 2TBSP of ghee

🔅add garlic and onion and allow to become translucent

🔅add chicken and allow to cook 👩🏾‍🍳

🔅 add potatoes 🥔 and carrots 🥕 and allow to soak in the flavors of the chicken

🔅add 2 TBSP of Flor’s Adobo Flavor Bomb

🔅add chicken stock/bone broth then add cilantro and remaining 2 TBSP of Adobo

🔅allow to simmer and cook until potatoes and carrots are tender to the fork 🍴

Serve piping hot with a wedge of lime and with Tostones for a full meal 🥘

You can also add some zoodles towards the end of the cooking process

Fun fact: the soup is even better in the 2nd day!
